Jackson Hole Film & Food Series
Written by admin on April 30, 2012 – 1:46 pm -Story and Photos by Christine Goodman
The first of three events to be held by the Jackson Hole Film & Food Series took place Tuesday evening, April 24 at the Center for the Arts. The very fortunate attendees were treated to a tasting of eight different wines in a "Face-to Face" wine seminar with Charlie Arturaola, a world renown sommelier. Along with these wines from four grapes (of eight terroirs) we enjoyed a most delicious pairing of four dinner courses prepared by the Kitchen's executive chef, Jarrett Schwartz. The menu included… shrimp and octopus ceviche with shaved fennel and grilled scallion vinaigrette…. red pepper spiced albacore tuna with a walnut-thyme vinaigrette… aji rubbed pork tenderloin with achiote spiced white bean puree, criolla and chimichurri… pan-seared red deer with shitake mushrooms, red cherries, sage and cream sherry reduction. YUM!
It was all fabulously delicious. And, I have to say… the shrimp and octopus ceviche was the BEST ceviche I have ever tasted… bar none! When I spoke with Jarrett after dinner, he generously shared the ingredients of his grilled scallion vinaigrette. The ingredients are… cilantro, lime, ginger, lemon, garlic EVOO, apple cider vinegar and sugar. And, of course, somewhere in there are the grilled scallions! Okay all you foodies, now all you have to do is figure out the formula…. or create your own!
To complete the evening, "The Ways of Wine", a film featuring Charlie Arturaola, was shown in the Center for the Arts theatre. The next Jackson Hole Film & Food Series event will be on Thursday, May 24. It will feature the film "The Architect and the Painter." The food venue pairing has yet to be announced. I expect it will be ever bit as good. I'll definitely be there!
